What is the optimal container size to avoid transplant shock?

For the record I'll be planning in my 1.2 acre food forest in the spring. Since I live here in Florida I am going to start plants from seeds / small cuttings that consist of pigeon peas, lentils, everglades tomatoes, moringa, chaya, hibiscus, sunflowers.

All in all about 300 plants in this selection.
